For the base
For a rectangular cake pan measuring 25 cm by 15:
6 eggs at room temperature
100 gr. sugar
150 gr. Manitoba flour * or 00

2 teaspoons skin of 2 grated tangerines
1 teaspoon vanilla extract *

For the cream with sugar:
400 gr. Powdered sugar
Juice of 1 lemon

Separate the egg yolks from the whites.
Add a little salt to the egg whites, beat until foam is formed.
Add the sugar little by little and mix until the white mass has become shiny.
Add the egg yolks one by one, always mixing them with the electric beater.
Add the vanilla and citrus peels.
Add the flour little by little and mix gently with the rubber spatula from top to bottom, so that the volume does not decrease.
Prepare the pan *, coating it with a little butter and dusting it with flour.
Pour in the dough.
Bake in the preheated oven at 180 ° C for 20 minutes.
