350 grams of spaghetti

30 grams of pecorino (sheep's cheese)

2 egg yolks

Salt

120 grams of pancetta

20 grams of Parmesan cheese

Olive oil

Preparation

Cut the pancetta into small cubes, if you bought it uncut.

Mix the egg yolks with the sheep's cheese, adding 40-50 grams of water. In the meantime, throw the pancetta into the pan with oil and leave until they become crispy.

Then add the pancetta to the cooked spaghetti and finally add the egg mixture with the cheese. Add pepper and salt as desired.

Careful! Do not make this mixture on fire, otherwise you will fry the egg yolks.
