Rice salad with chopped meatballs
After boiling the aldent rice in plenty of salted water for 10-12 minutes, drain and rinse in cold water. Take two jars of ready-made pickles for cold salads and add them inside. Add a little olive oil, finely chopped basil, salt, pepper, parmesan cheese and chopped meat (but you can also add chicken, tuna under oil or leave it vegetarian) mix and leave in the fridge for 30 minutes to bind tastes.
For those of you who want to lose weight instead of white rice you can use black rice, quinoa or millet, and instead of parmesan cheese use white cheese or tofu.
Store for 3-4 days in a cool refrigerator.
